Its green leaves and young shoots are widely used, both fresh and dried, for seasoning meat, curd cheese, and vegetable dishes, as well as for making natural sausages. The plant has a low, compact growth habit, forming a dense bush with slightly woody stems. Thanks to its attractive appearance, marjoram is perfectly suited not only for a classic herb garden bed but also for balcony boxes, patio pots, or a sunny windowsill. As sweet marjoram is very heat-loving and has a long development period, the best results in the Estonian climate are achieved by starting seedlings indoors.

Usage and Cultivation Instructions:

Sowing Time: For starting seedlings indoors, sow seeds indoors or in a heated greenhouse from March to April. Direct sowing outdoors is not reliable in Estonian conditions; only vigorous seedlings are recommended for outdoor planting.

Growing Location: Prefers a full-sun, warm, and sheltered growing location. The soil should be light, well-draining, and warm quickly.

Sowing Depth: Seeds are extremely fine (approximately 12,000 seeds per gram). Sow seeds on the surface of moist soil and gently press them against the substrate. Light and warmth are necessary for germination, so do not cover them with a thick layer of soil.

Transplanting and Spacing: Transplant young plants outdoors only in late May or June, once the risk of night frost has completely passed and the soil has warmed sufficiently. When planting, space plants 20 x 20 cm apart.

Harvesting: Leaves and shoots can be picked for consumption throughout the summer. For mass harvesting for drying, do so just before flowering or at the beginning of flowering (June to August), when the essential oil content in the plant is highest.

Tips and recommendations:

Since the seeds are very small, mix them with a pinch of fine sand before sowing. This helps to sow more thinly, preventing the germinating plants from growing too densely and avoiding damping-off.

When harvesting, cut the stems back to about 5 cm above the ground, leaving the lower leaf axils intact. This encourages the plant to branch out again and provides a good second harvest in the latter half of summer.

For drying, tie the cut branches into small bunches and hang them in a warm, shaded, and well-ventilated room. Dried marjoram retains its strong aroma for a very long time in a sealed glass jar.

Sweet Marjoram (Majorana hortensis) is an annual and highly aromatic herb, also known as ‘vorstirohi’ (sausage herb) in traditional Estonian cuisine.
