As the name suggests, Sunshine brings sunshine to your table. This variety’s tubers have exceptionally smooth skin and are long-oval. The eyes are very shallow, making peeling (if even necessary) incredibly easy.
The flesh is dark yellow and boils evenly soft without falling apart. It’s the ideal variety for boiling with the skin on – looks like it came from a restaurant on your plate.
