Wild garlic (Allium ursinum) is a perennial early spring leafy vegetable highly valued for its mild garlic flavor and rich vitamin content. The green leaves emerging in early spring are perfect for fresh salads, pesto, and soups, and can also be successfully dried or frozen for preservation.

Since harvesting wild garlic in the wild is often restricted, growing it in home gardens is a smart and environmentally friendly choice. The plant is long-lived and, under the right conditions, will propagate itself over the years, forming dense carpets covered with white flowers in spring. This crop thrives best in parts of the garden where other vegetables fail to grow due to lack of light—for example, in the shade of large deciduous trees, hedges, and shrubs, where the soil remains cool and pleasantly moist.

Usage and Cultivation Instructions:

  • Sowing time: Direct sowing outdoors from late September to early November. Wild garlic seeds require a cold period (stratification) to germinate, so autumn sowing is critical.

  • Location: Prefers a semi-shaded or fully shaded location and fertile, humus-rich, and permanently moist soil (the area under tree canopies is ideal).

  • Sowing depth: 1–2 cm.

  • Spacing: Sow seeds in rows with a row spacing of approximately 15 cm and a plant spacing of 10 cm within the row. The plant will later propagate and thicken on its own.

  • Harvesting: Leaves are harvested in early spring, in March and April. It is best to consume the leaves before the plant begins to bloom.

Tips and recommendations:

  • In the first years after sowing, wild garlic develops slowly. Harvest leaves sparingly, always leaving a few leaves on the young plant so the bulb can gather strength for the next season.

  • Do not mow the wild garlic bed after the leaves turn yellow in summer. The plant draws its energy back into the bulb to survive the summer dormancy period and sprout again the following spring.

  • If you wish to sow wild garlic in the spring as an exception, the seeds must first be kept in moist sand in a refrigerator (at +2 to –4 °C) for at least 4–6 weeks to mimic the winter cold period. Autumn sowing outdoors is, however, always a more foolproof solution.
